Tomato powder is a great little thing that can add a boost of umami, sweet, tomato-ey boost to dressings, sauces or dishes, and best of all, you can have all of that power in a tiny jar in your cupboard. This is my recipe for tomato powder.
What can I use this tomato powder recipe for?
Tomato powder is very versatile and great to have available. I use it to add amazing flavor to salad dressings, sauces, or just to sprinkle on top of dishes.
Here are some other ideas for what you can use tomato powder for:
- Homemade ketchup
Unless you want Heinz-style ketchup or a sugar-free variety you can make a super easy homemade ketchup with tomato powder:
6 tbsp tomato powder
½ cup water
½ cup apple cider vinegar
½ tsp salt
½ tsp mustard powder
seasonings like oregano, pepper, cumin to your liking
Add everything to a bowl and combine to have a super easy, delicious ketchup. - Tomato soup
4 tbsp tomato powder
16 oz water
½ tsp onion powder
½ tsp garlic powder
Add the water to a saucepan and bring to a boil. Add the tomato powder to the water and let simmer for 10 minutes. Season to taste with salt and pepper. - Tomato juice
4 tbsp tomato powder
16 oz water
Dissolve four tablespoons in sixteen ounces of water for a delicious all-natural tomato juice. - Pizza sauce
½ cup tomato powder
1 ½ cups water
½ tsp garlic powder
½ tsp basil
½ tsp oregano
salt to taste
Put in a saucepan, bring to a boil and lower the heat and simmer. Add seasonings and simmer until reduced and thick. Season to taste. - Tomato paste
Tomato paste usually comes in jars or cans, but there’s usually much more than you need.
1 part water
2 parts tomato powder
Just mix however much you need.

This powder is a fantastic culinary invention. An umami booster for your salad dressing or dish.
Ingredients
- 1 kg ripe cherry tomatoes
Instructions
- Turn the oven on to 60°C/140°F or as low as your oven goes. Fan assisted works better but if you don’t have that it can still work. It will just take a bit longer
- Cut the tomatoes into slices about 1.5 mm (1/16th inch) thick. If you have a mandoline, it would be a great time to use it
- Put the slices on a baking sheet lines with parchment paper. It took 3 sheets for me
- Put the sheets in the oven
- I can’t give you a certain amout of time that it will take, because it is very dependant on your oven/humidity and many other factors. In my oven it took about 16 hours. The tomatoes should be completely dry but not browned or burnt
- Peel the tomatoes off the parchment paper and place in a bowl
- Put the dried tomatoes in a food processor equipped with the sabatier blade (s-shaped blade) or a spice grinder and process until it is a coarse powder
- The tomatoes are ready to be made to a powder
- Store the powder a dry and cool place. The stay good indefinitely
