    My first tangzhong loaf. Came out great. One small thing in the instructions: The advice “You might not have to use all of the flour.” in step 5 comes after the dry and wet have been combined. Difficult to adjust at that point. (I did not have to.) Love your approach to baking research.

      I’ve made the wording a bit more precise. The point was that you don’t need to get every bit of flour incorporated, if the dough is already nice and supple.
