    Any estimate on how long will it take to rise to 75% in a 72 degree kitchen?

    I found the 70% hydration to be too much. The dough was extremely wet and sticky. Ill try again with 60%. I should have followed your advice and started with the lower amount.

    I’ve just made this and it looks beautiful. I’ve not tasted it yet. Questions. My bread didn’t come out near as dark as yours did. Is that because it looks like your oven is convection and mine is not? Also, would this recipe work if you made just one large loaf?

    Beware…with the pumpkin added this dough is close to 90% hydration. I had quite a time with it! I wish I had known the pumpkin was not calculated in the final hydration on the recipe. I would have lowered the water considerably! It is delicious though.
